THE HISTORICAL SALSAMENTERIA BARATTA

Located in a historic building in Busseto, the Historical Salsamenteria Baratta aims to delight its guests by immersing them in a journey through the universe of Giuseppe Verdi and the local food and wine tradition.

The shop first opened at the same time as the construction of the Fortress of the Pallavicino Marquises and the adjacent Borgo, made up of majestic palaces and characteristic alleys. It was along one of these that the bottega-bazaar, called Salsamenteria, was built: a meeting and refreshment place for travelers and pilgrims. The courtyard of the establishment was used for the slaughter of horses, donkeys, and pigs, with the collection of blood that was cooked and served hot at the tables of the shop. In addition, pork cracklings, headcheese, and pork meat were sold and eaten. Everything was served with parsley, peppers, and tomato sauces, sprinkled with coarse salt and white pepper, hence the name Salsamenteria (“Sauce Shop”).

In 1870, the Baratta family purchased the shop and ordered its reopening in 1873. From then on, it witnessed the Wars of Independence, the Colonial Wars, and two World Wars: nonetheless, the shop always remained open, present, and full of vitality. Since May 2000, the shop has been managed by the Concari family, who carry on a tradition made of art, music, aged cured meats, excellent wines, and curious Verdian anecdotes.

Many illustrious figures have crossed the threshold of the historic Salsamenteria Baratta: Giuseppe Verdi and his famous friend, the singer Teresa Stolz, the renowned publisher Giulio Ricordi, Ottorino Respighi, Arturo Toscanini, Gabriele d’Annunzio. As well as singers, painters, writers, and gourmets from all over the world, as evidenced by the various memorabilia scattered throughout the Busseto establishment.


Tasting menus are available upon reservation for groups.
Opening hours are: Tuesday–Thursday (11:00 a.m. – 07:00 p.m.) and Friday–Sunday (11:00 a.m. – 11:30 p.m.)
